Whew! I'm glad today is finally over! It took all day to finish both deer. We got 15 packs of steaks and stew meat, 2 roasts and 28 lbs of ground meat! We mixed the ground deer with ground pork and made over 56 lbs of sausage!! There's also a container of tenderloin marinating. We usually keep some of the ground meat, but decided we'd rather have sausage. There's nothing like good ol' homemade deer sausage. Besides, the guys usually take sausage with them when they go to the deer lease to share with everyone over there. Ned's going to smoke MOST of the sausage tomorrow at his Dad's house. The one thing we forgot to do is leave some meat out for Byron to make jerky... he was so disappointed when he finally did remember. (Sorry, Punkin!)
I'm heading for bed... as soon as I switch over the laundry. I'm so tired ... and I want to go vote as early as we can tomorrow. I pray we find John McCain our new president around this time tomorrow night!
