Old habits die hard... 'nuf said?
Byron was hungry and wanted a snack. He asked me to make him CHEESE DIP... so this was my compromise. Not HEALTHY, but I thought it had to be better than PROCESSED 'cheese'.
Here's what I did:
I broke off a small corner of frozen bacon ends and pieces that I have frozen flat in small ziplocs already cut even smaller than it comes... put it in a small saucepan to start defrosting and cooking... added one can of WalMart brand pinto beans and let them heat through... meanwhile added: a sprinkling of chili powder, dash of cayenne pepper, dash of cumin, sprinkle of garlic powder... smashed with potato masher. Done!
I served him a bowl and dropped in cubes of Monterrey Jack / Colby cheese to melt just with the heat of the beans.
For the chips, I heated a little bit of Canola oil in a pan just bigger than my corn tortillas and fried them crispy one at a time and lightly salted them as soon as they came out of the oil.
Not sure how good or how bad this was for him... but it satisfied his snack urge and he was happy. Thank God Byron is still able to indulge occassionally... which is why he got bacon in his beans and fried not baked chips! :)
